You might try metering on those lightest spots so you can get some detail in them instead of just the white detailless burn-throughs. If you do this and push your shutter button half way down and then recompose your shot, you lock in the metering and focus while still being able to reframe your shot. It's a trick I learned to get rid of those white detailless areas in my sunsets.
